Tasting Notes

Why we like it

- Careful selection of first choice grapes in the field and in the cellar;
- Alcoholic fermentation at a controlled temperature.
- Long maceration on the skins (at least 20 days) and gentle pressing.
- Maturation on yeast and malolactic in the wood.
Expansion: In the 1st-2nd Passage wood (500 Lt.) for approx. 20-22 months followed by at least 12 months in the bottle. 

Pairings

Ideal with traditional Tuscan dishes, especially too Game, first and second courses, timbales, grills.
Also excellent with aged cheese and Lardo di Colonnata.
